When trying to stick to a budget, there is always an extra element of challenge when you have to come up with tasty meal ideas that don’t break the bank, especially with the rising cost of groceries.
Here are some meal ideas that cost about a dollar or less per serving we like to call dollar Dinners:
Cut boneless chicken thighs into bite-sized pieces (about 3 thighs per person). Marinate in a Ziploc bag with BBQ sauce (enough to coat the chicken well) for about three to four hours. Cut up a collection of peppers and onions and skewer them on shish kabob sticks. Fire the BBQ up to medium, grill for about 20 minutes and serve over a bed of rice. Yummy- and enough money left over for dessert!
This is a great dish to stock your freezer with when ground beef goes on sale. I use a Clubhouse seasoning packet to speed up the process and to cut down on ingredients. Prepare about 2 cups worth of mashed potatoes. Chop an onion. Fry up that ground beef and throw the onion in. Add a can of creamed corn for some extra moisture and flavour. Add the packet of seasoning, and simmer until bubbly and thickened. Pour in 9×13 baking dish, top with mashed potatoes and bake in the oven at 425 for about 20 minutes, or until potatoes are golden and heated through.
Baked Potato Bar
Baking potatoes are not only cheap- they are tasty and provide an excellent base for a wide variety of meal options.
Bake one potato a person. A baked potato bar is a great way to use up leftovers as well. Sauté onions and mushrooms. Shred cheese. Leave some shredded for topping, and melt some with some milk and butter to make a sauce. Put out bowls of chili, shredded chicken, cooked broccoli and sour cream. Build yourself a cheap and delicious meal.
